- 1/2 teaspoon garlic powder

- Juice of 1/2 a lemon (about 1 tablespoon)
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chopped chicken, broccoli florets, bell peppers, zucchini, and red onion.
- Drizzle the olive oil over the chicken and vegetables. Sprinkle with oregano, thyme, garlic powder, salt, and black pepper. Toss everything together until the chicken and veggies are evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan. If needed, use two baking sheets.
- Roast for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. You can stir the mixture halfway through cooking for even browning.
