This meal is simple to make and looks great on the plate. You use the squash skin as a bowl, so there are fewer dishes to wash. Here is how to make this comforting dinner tonight.

Ingredients
- 1 medium spaghetti squash (about 2 to 3 pounds)
- 1 tablespoon olive oil
- 1/2 pound lean ground turkey (93% lean or higher)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup low-sodium marinara sauce (look for no added sugar)
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1/2 cup shredded part-skim mozzarella cheese
- Fresh parsley for garnish (optional)
Instructions
First, heat your oven to 400 degrees. Use a sharp knife to cut the spaghetti squash in half lengthwise. This can be tough, so make sure your knife is sharp. Scoop out the seeds and stringy parts with a spoon and throw them away.
Second, brush the inside of the squash halves with half of the olive oil. Season with a little salt and pepper. Place them cut-side down on a baking sheet lined with parchment paper. Bake for 35 to 40 minutes until the flesh is tender when poked with a fork.
Third, while the squash bakes, make the filling. Heat the remaining olive oil in a large skillet over medium heat. Add the onion and garlic. Cook for 3 minutes until they are soft and smell good.
Fourth, add the ground turkey to the skillet. Cook the meat, breaking it up with a spoon, until it is no longer pink. This should take about 6 to 8 minutes. Stir in the marinara sauce, Italian seasoning, salt, and pepper. Let it simmer on low heat for 5 minutes.
Fifth, scrape the cooked squash. Take the squash halves out of the oven and flip them over carefully. Use a fork to scrape the flesh. It will pull away in strands that look like spaghetti. Keep the strands inside the squash shells.
Sixth, assemble the boats. Divide the turkey mixture evenly between the two squash halves. Stir the meat gently into the squash strands. Top each half with the mozzarella cheese.
Seventh, melt the cheese. Put the squash boats back in the oven for 5 minutes until the cheese is melted and bubbly. You can also broil them for 1 to 2 minutes if you like the cheese brown on top. Garnish with parsley and enjoy.
