Are you tired of washing ten different pots after cooking a healthy meal? You want to lose weight but you do not want to spend hours in the kitchen. I get it. Weight loss is hard when you feel tired after a long day at work. That is why sheet pan meals are the perfect solution for your busy nights.

Healthy Dinner Recipes For Weight Loss: Easy Sheet Pan Chicken

When you look for healthy dinner recipes that actually help you shed pounds, you need two things. First, the food must taste good. Second, it must be easy to make so you do not order takeout instead. Today we are making a simple sheet pan lemon herb chicken with fresh asparagus. It is low in calories, high in protein, and takes almost no effort to clean up.

Why Sheet Pan Meals Help You Lose Weight

Many people fail their diets because cooking feels like too much work. If a recipe has twenty steps, you probably will not make it. This sheet pan chicken keeps things simple. You put everything on one tray, slide it in the oven, and walk away. It is that simple.

Protein is your best friend when you want to lose weight. Chicken breast gives you plenty of protein to keep you full for hours. This stops you from snacking on junk food later in the evening. Asparagus adds fiber which helps your digestion and keeps your stomach happy. If you want another easy meal, try this Healthy Dinner Recipes For Weight Loss: Turkey Cabbage Skillet.

We also use very little oil in this recipe. A small amount of olive oil helps the chicken get crispy without adding too many hidden calories. You get all the flavor from fresh lemons, garlic, and dried herbs. These ingredients have almost zero calories but they make the food taste amazing.

Recipe Card

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Servings: 2 people

Ingredients

  • 2 medium chicken breasts (about 6 ounces each)
  • 1 large bunch of fresh asparagus (ends trimmed)
  • 1 tablespoon olive oil
  • 1 fresh lemon (sliced into rounds)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Half teaspoon salt
  • Half teaspoon black pepper

Instructions

Step 1: Heat your oven to 400 degrees. Line a large baking sheet with parchment paper to make cleaning up easy.

Step 2: Pat your chicken breasts dry with a paper towel. This step helps the herbs stick to the meat.

Step 3: Place the chicken breasts in the center of the baking sheet.

Arrange the trimmed asparagus around the chicken in a single layer.

Step 4: Drizzle the olive oil over the chicken and the asparagus.

Use your hands or a brush to coat them evenly with the oil.

Step 5: Sprinkle the minced garlic, dried oregano, dried thyme, salt, and black pepper over everything.

Rub the spices into the chicken breasts so they get lots of flavor.

Step 6: Place the fresh lemon slices on top of the chicken and asparagus.

The lemon juice will release as it bakes and keep the meat very juicy.

Step 7: Bake in the heated oven for 25 minutes.

Check the thickest part of the chicken with a meat thermometer.

It should read 165 degrees Fahrenheit.

Step 8: Remove the pan from the oven and let the chicken rest for five minutes.

This keeps the juices inside the meat.

Serve hot.

Simple Tips to Make This Dinner Even Better

Do you want to change things up? You can easily swap the asparagus for other green vegetables. Green beans, broccoli florets, or zucchini slices work great on this sheet pan. Just make sure to cut them into similar sizes so they cook at the same speed.

I like to squeeze a little extra fresh lemon juice over the asparagus right before eating. It adds a bright flavor that makes the whole meal taste fresh. You can also add a pinch of red pepper flakes if you like your food spicy.

If you have leftovers, store them in an airtight container in your fridge. They will stay fresh for up to three days. You can eat the chicken cold on top of a salad for a quick lunch. Or you can warm it up in the microwave for a fast dinner.
