You will need:
- Four chicken thighs with the skin on
- One bunch of fresh asparagus with the woody ends cut off
- Two lemons sliced into thin rounds
- Four cloves of garlic minced
- Two tablespoons of olive oil
To make it, heat your oven to 400 degrees. Place the chicken thighs on your baking sheet. Rub them with olive oil, garlic, salt, and black pepper. Put the asparagus spears around the chicken. Drizzle the asparagus with olive oil and a pinch of salt. Lay the lemon slices over the chicken and asparagus. Bake everything for about 30 minutes. You will know it is done when the chicken skin is crispy and brown.
The Easy Sausage and Sweet Potato Bake
If you want something warm and filling, this dish is perfect. The sweetness of the potatoes pairs beautifully with savory sausage.
You will need:
- Four smoked sausages sliced into thick coins
- Two large sweet potatoes peeled and chopped into small cubes
- One green bell pepper chopped
- One yellow onion chopped
- Two tablespoons of olive oil and one teaspoon of paprika
Heat your oven to 400 degrees. Put the sweet potato cubes, pepper, and onion on your sheet pan. Drizzle them with olive oil and sprinkle the paprika on top. Toss them with your hands so they are coated well. Spread them out in a flat layer. Add the sausage slices to the pan, mixing them in with the vegetables. Bake for 25 minutes, tossing once halfway through. The sweet potatoes should be soft when poked with a fork.
The Quick Sheet Pan Shrimp Fajitas
Shrimp cooks very fast, which makes this recipe perfect for busy nights. You can have dinner on the table in under 20 minutes.
You will need:
- One pound of large shrimp peeled and deveined
- Two bell peppers of any color sliced thin
- One medium red onion sliced thin
- One tablespoon of taco seasoning
- Two tablespoons of olive oil
Heat your oven to 425 degrees. Put the sliced peppers and onions on the pan first. Toss them with half of the oil and half of the taco seasoning. Roast them for 10 minutes to let them soften. Take the pan out and add the shrimp. Add the rest of the oil and seasoning. Toss everything together and spread it out. Bake for another 6 to 8 minutes until the shrimp turn pink.
