Ingredients
- 1 pound lean ground turkey 93% lean is best
- 2 medium zucchinis, chopped into bite sized pieces
- 1 red bell pepper, diced
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes optional for heat
- Salt and black pepper to taste
- 1/2 cup low sodium marinara sauce
- 1/4 cup shredded mozzarella cheese optional
Instructions
1. Heat the olive oil in a large skillet over medium high heat. Add the diced onion and minced garlic. Cook for about two minutes until they start to smell good and soften. Stir them often so the garlic does not burn.
2. Add the lean ground turkey to the skillet. Use a wooden spoon to break the meat into small pieces as it cooks. Stir occasionally until the turkey is no longer pink, which takes about five minutes.
3. Toss in the chopped zucchini and diced bell pepper. Sprinkle the garlic powder, dried oregano, red pepper flakes, salt, and black pepper over the mixture. Stir everything together well so the spices cover the meat and veggies.
4. Pour the low sodium marinara sauce over the meat and vegetables. Lower the heat to medium. Cover the skillet with a lid and let it simmer for five minutes until the zucchini is tender but not mushy.
